Creamy Slow Cooker Chicken with Biscuits

Its Friday! That means it's time for another Your Recipe- My Kitchen Post.


I'm really trying to cook my way through all the fabulous recipes I have either bookmarked or pinned.  My list keeps gets longer and longer  though so it's not easy.  I bookmarked this great slow cooker recipe a couple of weeks ago.  It is a Creamy Slow Cooker Chicken and Biscuits recipe from Framed Cooks.  I put this in the slow cooker one day last week when the weather was cold, rainy and dreary - this was the perfect recipe for that kind of day.  This dish is so comforting and so good I could not wait to share it with you.  It is pretty much a deconstructed pot pie - I love pot pie so I knew I would love it.  Hubby on the other hand does not like pot pie much (I know! Who doesn't like pot pie?)  Sometimes I have to cook what I like though and hope for the best.  He loved it! I believe his exact words were, "I normally don't like this stuff but this is really good!  And then he had more...Enjoy!

What you need:
4 carrots, cut into 1-inch lengths
2 celery stalks, thinly sliced
small onion, chopped
1/4 cup AP flour
1 1/2 pounds boneless, skinless chicken breast halves (about 8) 
1/2 teaspoon poultry seasoning
kosher salt and black pepper
1/2 cup dry white wine
1/2 cup low-sodium chicken broth
biscuits, split (I made the kind in the tube)
1 cup frozen peas
1/2 cup heavy cream

What you do:
In a Slow cooker,combine the carrots, celery, onion, and flour. Place the chicken on top and season with the poultry seasoning, 1 teaspoon salt, and ¼ teaspoon pepper. Add the wine and broth to the pot. Cover the slow cooker and cook until the chicken and vegetables are tender, on low for 5 to 6 hours or on high for 2 1⁄2 to 3 hours.
About thirty minutes before serving, prepare the biscuits.
Ten minutes before serving, remove the chicken and shred into bite sized pieces and then add it back to the slow cooker you will also add the peas, cream, and ½ teaspoon salt and stir to combine. Cover and cook until heated through, 5 to 10 minutes more.
To serve, place the bottom halves of the biscuits in shallow bowls, then top with the chicken mixture and the remaining biscuit halves.

Yum, this looks like a great comfort food dish and is one that I will definitely prepare in my new slow cooker...maybe tonight to brighten a gray, chilly day.
